Top 5 Favorite Recipes to Stay Energized throughout the day
Focusing on me and my health has been a big priority for me! I’m sure everyone with kids feels this way, but I felt like my energy was getting drained so fast since having Mav and with our busy schedules being nonstop; I couldn’t afford to let nutrition be something that was weighing me down. Since our lifestyle is so go go go, I knew recipes that would keep my energy up and fuel me properly was key!
You all know that cooking in the kitchen is something I’m trying to get better at! Easy and quick is essential for now, but also healthy! Maybe someday in the future I’ll have more time to cook, but since I don’t currently - and know so many of you all are in the same boat - I look for ones I can prep in about 30 minutes or so. Here are my top 5 favorite recipes to stay energized throughout the day. Majority of them are breakfast-focused, so if you want to see other recipes we love, let me know!
Overnight oats
Overnight oats are so simple, yet so satisfying. If regular oatmeal is a bit plain for you, you need to try overnight oats! It takes a little thought the night before, or if you’re in the groove of meal prepping at the beginning of the week, you could make them all on Sunday night! All you have to do is pour the oatmeal into a jar, pour enough milk to cover the oats, then add any extras you might want: honey, protein powder, almonds, etc. Stir it together and put in the fridge. The next morning, take it out and top with fruit!
Apple Slice Cookies
Ok so these are something both Mav and I can enjoy!! If you have a sweet tooth or like to munch on a snack during the day, you will love these. I slice the apples, top with almond butter and depending on my mood, I top with cinnamon, dark chocolate chips or coconut flakes!
Smoothies
I’m still trying to master the right smoothie, but luckily there are so many recipes out there for healthy smoothies! It’s a great way to get your greens in early in the day and they’re really filling, too. I really like Be Well by Kelly’s approach to smoothies and her recipes!!
Makeshift Chipotle Bowls
Making your own bowls at home is a really quick meal and it’s more affordable than going somewhere to buy one! You can make bowls a plethora of ways, but we like to use rice, black beans, peppers, onions, corn, chicken, avocado and it is so good! There are a lot of different sauces you can make, too, to top the bowl with.
Chia Seed Pudding
Don’t underestimate how good this can taste. It all depends on how creative you get with your ingredients! Like the overnight oats, all it takes is a little thought the day before and then you get to reap the benefits. Chia seeds pack a lot of punch for such a small food; they’re a superfood, so they’re high in antioxidants, protein and fiber (and a ton more!). You pretty much prep them the same way, too. Use 3-4 tablespoons of chia seeds, then pour a cup of milk in! I like to add honey and then the next day I top with fruit! Makes for a great snack, dessert or even breakfast!
